Lambsquarters is out in full steam and amaranth is only just starting so for our sample tastings and picnics we have been substituting lambsquarters for amaranth using the Foraged Flavor filo recipe. Has a nice rich nutty taste, more flavor than spinach and great with the feta….can also just flash fry over high heat….pick the younger leaves or side shoots before flowering and toss any thick stems
