Lemon balm melissa officinalis 

is often planted in gardens but escapes in to the wild and comes up year after year. I promised everyone at the Seattle Book Larder that I would find something to do with lemon balm other than TEA! Chef Eddy’s comment: great in crab cakes, soup, sauce, yogurt, cakes….for a recipe try substituting lemon balm for bee balm on page 119 of Foraged Flavor in the Bee Balm Spring Rolls with Lettuce and dipping Sauce. Lemon balm is in season after the bee balm flowers.
